I must do the sign in two time ? first i put a timestamp with a PDFDigitalSignature and after I sign the document with a Signature object ?
Is there a way to do the two operation at the same time with the use of only one object (Signature or PDFDigitalSignature) ?

We were investigating this issue that was not so easy to reproduce.
During this investigation, we create two tickets
SIGNATURENET-5164 - to resolve using TimeStamp settings when signing with the external certificate.
SIGNATURENET-5163 - to resolve to ask pin twice.
During this week we are going to get some estimation on results and get back to you.
