How can I update the text that is processed with this tag {title} with my own text when the email is sent? I don’t want to replace the tag with text but use the tag with my own text.

Thank you for your request. At this time you can’t modify {title} tag, but we will investigate this and we will add it to our roadmap. Please stay tuned and check new releases for this functional.
We can suggest you to remove this tag and use {EnvelopName} tag instead, for example “Please sign the envelope {EnvelopeName}” in your template for email.
